Green Apple Toffee Dip

Green Apple Toffee Dip: Green apples, sliced 8 oz. cream cheese 1/3c. brown sugar 1/4c. sugar 1 tsp vanilla toffee bits Mix all ingredients and serve with sliced green apples. You might want to wait and put the toffee bits in the dip right before serving.

Baked Potato Dip by Ashley

Another great appetizer from my girlfriend Mary!  I have made this several times.   Baked Potato Dip   1 8oz. Container of Sour Cream 1 8oz.  Container of Whipped Cream Cheese 1 8oz.  Pkg. of Shredded Cheese Crumbled Bacon 1 Bunch of Green Onions chopped (optional) 1 Hawaiian bread loaf Wheat Thins   Mix all ingredients in a large bowl.  Transfer the mixture into the center of a carved out Hawaiian bread loaf.  Place on pan and put in oven at 350 for one hour.  Serve hot with wheat thins.

These are a HUGE hit! My mom has been making them for years for us and as a kid my favorite thing was to get a huge spoonfull of the dough before she baked them. Although, I am sure that is not good for you...I will still allow my kids to do the same thing. I actually have already let my son do it. And he loved it...OF COURSE! :) 1 1/4 C. all purpose flour 1/2 TSP. baking soda 1/4 TSP. salt 1/2 C. marg. or butter(softened) 1 C. sugar 1 Egg 1 TSP. vanilla 2 C. rice krispies 1 6 OZ. Pkg. semichocolate morsels Mix 1.) Flour, soda, and salt. SEPERATELY MIX 2.) Softened Marg., sugar, egg, and vanilla COMBINE 1 and 2-mix well and ADD 3.) Rice Krispies and Choc. Morsels BAKE for 12 min. at 350

Just made this the other night for the first time and they were yummy!!! Everyone loved them and I am actually taking them to a friend on Friday for a meal. I served them with rice, chips and salsa. This dish makes a lot! So, it is just two of you eating it or two adults and 1 child I would recommend freezing half of the recipe and cooking it later. 4 Chicken breast 4 oz. Cream cheese 2 TBSP. green chilis(or whole can) 2 TBSP. chopped onions 1 TBSP. butter-melted 2 C. shredded Monterey Jack with Peppers cheese(I used pepper jack cheese and shredded it myself) 2 C. cheddar cheese 1 C. salsa 1 C. whipping cream 8-10 lg. flour tortillas Cook onions in butter until carmelized. Add green chilis and cream cheese. Mix in chicken. Put 3 TBSP. of chicken mixture in each tortillas center. Then add cheeses. Then add salsa. Fold seam side down. Place in baking dish. Pour whipping cream on top. Sprinkle with remaining cheese on top. Back on 350 for 30 min.

Strawberries and Cheese by Ashley

This is my Mom's recipe. It is an oldie, but a goodie!!!  This appetizer sounds a bit weird, but it is so good!   Strawberries and Cheese   4 cups shredded cheese (sharp and mild) 3 cups mayo 1 cup pecans-chopped 8 slices bacon-cooked and chopped 1 bunch green onions chopped 2 tsp salt 1 tsp pepper 1 lg strawberry preserves   Serve with crackers.  The baked Wheat Thins are great with it.   Mix all ingredients, except preserves.  Before serving heat preserves in microwave for a few seconds and pour over the dip.  Refrigerate leftovers.      

Jarinda's Salad

This is a recipe from one of my mom's BFF's. She and her husband are amazing cooks!!! This one is a WINNER, especially for having people over. Ingredients: Romaine Bacon-fried Black Beans Yellow corn Onion Mexican four cheese, shredded Pecans Ken's Thousand Island Salad dressing Cut Romaine. Fry Bacon. Saute black beans and yellow corn in bacon grease. Chop onion. Toast pecans. Toss with dressing.
