Lima Bean Soup by Ashley

Do not let the Lima Bean part fool you. This recipe is awesome. It makes a ton. And it is southern to the core. Serve it with cornbread!! Please at least try it!! Yummy.

Ingredients:
2 cups dry baby lima beans (or regular size limas work also)
Lower sodium bacon (you can use turkey bacon)
1 (10-ounce) frozen whole kernel corn
1 (14-ounce) package smoked kielbasa or sausage, thinly sliced (I used turkey kielbasa)
1 onion, chopped
1 1/2 Tablespoon flour
salt and pepper, to taste

Directions:
Place beans in large heavy saucepan. Add enough water to cover. Bring to a boil. Cook covered for 2 1/2 hours or until tender. Cook bacon in large skillet on medium heat until crispy. (Note: Since the turkey doesn't have much fat, I used a little bit of olive oil.) Drain on paper towels, reserving drippings in skillet. Crumble bacon. Add bacon, corn kielbasa (or sausage) and onion to beans in saucepan. Reduce heat to low; simmer 1 hour. Stir flour into reserved bacon drippings in skillet. Cook on medium-low heat until bubbly, stirring frequently. Gradually stir in 1 1/2 cups of water until well blended. Cook on medium heat until mixture boils and thickens, stirring constantly. Add soup; simmer 30 minutes. Season to taste with salt and pepper.

Bulldog Brittle

Apparently this recipe has been around for a long time but until this past Christmas I have never eaten it----loved, loved, loved it!! As always my favorite recipe's are those that are delicious and easy, so here's another one. Donna Bulldog Brittle 8 whole graham crackers 1 cup of chopped pecans 1/2 cup (1 stick) margarine 1/2 cup (1 stick) butter 1/2 cup sugar This is so good and so inexpensive to make that you will probably want to double the recipe. Break crackers into fourths. Place on foiled lined cookie sheet pan, leaving space between crackers. Sprinkle chopped pecans over top of crackers. Melt margarine and butter in boiler. Add sugar, bring to a boil, stirring constantly. Boil exactly 2 minutes, pour over pecans and crackers. Bake at 350 for 10-12 minutes. DO NOT BROWN. Let cool and break into pieces.

A Littel Tidbit by Ashley

Ok, so this isn't a recipe, but something tells me you will all want to know.  I have been meaning to tell my Mom, Lindsey, and Kimberly but keep forgetting. If someone told me I could only have two things in my make-up bag, it would probably be eyeliner and mascara.  I found a new mascara that I love.  This is coming from someone who's favorite was $27 dollar a tube Lancome mascara.  It is lashblast from Cover Girl.  O magazine rated it #1 best mascara of this year! I love it!! Just thought I would share!

Pepper Penne by Ashley

Oh My!!  We had this tonight for dinner.  All of the boys ate it, including Gray who is 1 and Sam who usually only eats the bread for dinner.  I loved it and it was so easy!  Enjoy!!!   Ingredients:   1 package of penne pasta (I used whole grain) 1/2 t. rosemary 2 packages of sliced pepperoni , halved ( I used 1 package and it seemed to be plenty) 1/4 c. pepperocini (omit if too spicy for kids, but it wasn't really spicy with it.  I will probably use more than 1/4 next time) 1 jar roasted red bell pepper, drained and chopped 3 1/2 c. boiling water 1/2 c. whipping cream (I used milk) 1/2 c. grated Parmesan cheese   Directions:   In a large pot, layer pasta, rosemary, pepperoni, pepperocini, and roasted red pepper.   Add water and bring to a boil.   Reduce heat, cover, and let simmer until pasta is tender.   Add cream and cheese.  Toss to coat.
