Sweet Mama Rose's Oatmeal Apple Raisin Muffins By: Lindsey

My husband's grandmother, Mama Rose, is so sweet!! Derek says I don't make any of her stuff....and I will tell you why. It is all made from SCRATCH!! Lasagna, brunswick stew, muffins, cakes, etc. Whew!! It is good food, don't get me wrong. But, my goodness...who has time for recipes all from scratch?? So, I am going to try my hardest to start making some of them. This morning I made her Oatmeal Apple Raisin Muffins. Derek loves them and has mentioned to me before about making them. Keep in mind that Mama Rose is diabetic. Which means, that lots of things she makes is healthier for us. Ha! These muffins are a tasty, healthy treat for you and your kiddos. I love muffins! So, it is fun eating them when I know they have ONLY 1/3 cup sugar and apples and raisins in them. Parker, my son, also loved them. I didn't add any butter to the top of his and he ate them like crazy.

1 egg
3/4 cup milk
1 cup raisins
1 apple, peeled and chopped
1/2 cup oil(I used vegetable oil)
1 cup all purpose flour
1 cup quick oats
1/3 cup sugar
3 tsp. baking powder
1 tsp. salt
1 tsp. nutmeg
2 tsp. cinnamon

Beat egg. Stir in remaining ingredients, mixing first to moisten. Pour into 12 greased muffin cups until 3/4 full. Bake at 400 for 15-20 minutes. Serve cool or piping hot with butter.

Just made these tonight, and they are DELICIOUS! Stephen says they're his favorite so far. I can't wait for the kids to eat them in the morning...Kate calls muffins "breakfast cupcakes." She's going to love them!

Buffalo Chicken Chili

Hey Friends!! This recipe is super easy and quite good. Beware that it is a little spicy. If you like wings or anything buffalo style then you will like this. Buffalo Chicken Chili Ingredients : 2 chicken breasts (cooked & shredded or raw & whole) I used 3 total. 1/2 bottle Frank's Buffalo Sauce 1 (15.5-oz) can beans (garbanzo, black, pinto, whatever!) I used garbanzo. 1 large sweet onion, chopped 2 (15-oz) can tomato sauce (oops! I think I only used 1 can) 1 can cream-style corn 1 cup salsa 2 jalapenos, seeded and chopped I used sliced jalapenos in a jar. Directions : Dump everything into the crockpot, and stir well. Cook on low for 8-10 hours. If your chicken was raw when you put it in, take it out after about 8 hours, shred it, and then stir it back into the chili. Enjoy!

Yummy Corn Casserole By: Lindsey

Hey ladies! Well, just wanted to let you in on a GREAT recipe that my mother-in-law shared with me. EVERYTIME I make it people go on and on about how much they love it. The other day, at a neighborhood block party(where I knew no one) someone called me the corn girl and asked everyone to give me a round of applause for the corn casserole that I made(and they did). Ha! So, definitely try this one. You will LOVE it! 1 8oz. cream cheese 1 can creamed corn 1 can whole kernel corn(drained) 1 box of jiffy corn bread mix 1 stick of butter Mix all the ingredients together(I would highly recommend using a mixer...not by hand). Spray a small pyrex dish(unless you double the recipe, then use a 9x13). Pour the mixture into the dish. Bake on 400 for 45 min-1 hour. Take out when it is a little brown.

Chocolate Sour Cream Bundt Cake

I have not posted in a REALLY long time. :( Sorry friends. Life has gotten a hold of me. I am 6 weeks and 1 day away from birthing my 4th and final baby. :) I am happy about this!! VERY! Needless to say an *almost* 6yo boy, 4yo boy, 2yo girl, and soon to be a sweet baby girl has kept me very busy. I hope that once this baby is born and life is on a good routine I will start posting again. I am glad this blog isn't totally left up to me or it would be a failure! Thanks to my Mom, sister, and sister in law for continuing to post.        Ok, I was really wanting to bake a chocolate bundt cake bc I saw a recipe online of one and it made me crave one. I don't know why but I love baking bundt cakes. They are pretty and I don't have to do much of anything to make them that way. And usually they are yummy! But when I went back to find that recipe I couldn't. I, instead, found this one and it really is SO good! Probably my favorite chocolate cake I have ever made. And it is ...
