My 8yo and I made these last night on a whim. We had all the ingredients in our pantry. They are delicious and healthy. My boys loved them. Pumpkin Peanut Butter Oatmeal Bars Ingredients : scant 1/2 cup peanut butter scant 1 cup pumpkin puree 2 cup oats (whole rolled; not quick cook) ( I used quick and it still worked) 1 cup brown sugar, packed ( I used Splenda brown sugar) 1/2 cup white sugar ( I used Splenda) 1 Tablespoon pumpkin pie spice 3/4 teaspoon cinnamon 1 Tablespoon vanilla extract 1/3 cup each of add-ins: white chocolate chips, Craisins, or whatever your heart (or pantry) desires ( I used Craisins, chocolate chips, walnuts, and coconut) Directions : Preheat oven to 350-degrees F. Combine all ingredients into a mixing bowl and stir by hand. Spread batter (it will be pretty moist) into a foil-lined and sprayed 8x8 or 9x9-inch baking dish.
