Memaw's Vegetable Soup By: Lindsey

Although it is summer this recipe is yummy! AND what is even better is that you can freeze whatever you don't eat and thaw it out for a later date(which we did and it was still really good!). My husband absolutely loved this soup. And it is easy and cheap if you buy off brand veggies. BTW, this is my grandmother, Memaw's recipe. And I just found out about it. Crazy huh?

1-2 lb. ground beef, fry and drain(I only did 1 lb.)
1 Can of corn
1 Can of english peas
1 Can of green beans
1 Can of butter beans
1 Can of carrots
1 Can of potatoes, cut into quarters or slice
1 Onion, cut up
2 Can's of diced tomatoes(roasted garlic)
1 Can of tomato paste, small
Salt and Pepper to taste

After your beef is fried and drained add all the rest in large pot. DO NOT drain any of the rest. Mix and heat well.

I served it with Jiffy corn bread. And scooped out the veggies onto a plate for my 15 month old. He loved it too!
