Skinner's Lasagna By: Lindsey

Hey! Haven't posted in forever. So, I am making the Skinner's (noodles) lasagna recipe that is on the back of the box tonight and I thought I would post it. Actually, I have never written this recipe down because I always trust that it is on the back of the Skinner's lasagna noodles box and yesterday it failed me. :( Thank GOODNESS I practically remembered it AND I had more noodles from before and it had the recipe on it. I love, love, love this homemade lasagna recipe. It is easy, yummy, and great for heated leftovers(for which we will do on Sunday, ha). It serves probably 6.

1 lb. ground beef
3 C. spaghetti sauce(28 oz. jar)
1-1/2 C. water
1-3/4 C. ricotta(15 oz. container)
2 C. shredded mozzarella
1/2 C. grated parmesan cheese
2 eggs
1/4 C. chopped parsley
1/2 TSP. salt
1/4 TSP. pepper
Box of uncooked skinner lasagna noodles

Preheat oven to 350. In saucepan brown meat; add spaghetti sauce and water; let simmer for 10 minutes. In bowl mix ricotta, 1 half mozzarella, parmesan cheese, eggs, parsley, salt, and pepper. In 13x9 dish pour 1 C. sauce on bottom. Then put 3 uncooked noodles lengthwise on top of sauce. Then pour sauce over noodles, then add ricotta cheese mixture over sauce, then noodles again. Repeat steps until out of sauce and cheese mixture. Sprinkle remaining mozzarella cheese on top. Cover with aluminum foil and bake for 45 minutes. Then bake uncovered for 15 minutes.

Simple Cole Slaw by Ashley

I love coleslaw, all different kinds, but I have never made it before. A girl that I don't know has a recipe blog that I go to often and I got this recipe from her. I loved that it said "simple". Simple I can do. *my Dad loves coleslaw as well, but is kind of a coleslaw snob and he really liked it. *i served it with homemade sloppy joes and tater tots :) Ingredients: 1/3 cup canola-based mayonnaise ( I am sure you can use any kind of mayo, but this is better for you.) 1 and 1/2 teaspoons sugar 1/2 teaspoon black pepper 1/4 teaspoon salt 1/4 teaspoon dry mustard 3 cups packaged cabbage and carrot coleslaw Directions: Combine mayo, sugar, pepper, salt, and dry mustard with a whisk. Add coleslaw and toss.

BIG news! LABELS

Guess what? I found out how to add a label section to the side of the blog!! Yay! So far I have quite a few labels over there. I am sure it will get more detailed than that. Hopefully if any of you are looking for something in particular you can just click on our labels and find what you need. BTW, if it is a main dish and also Italian(or whatever) I have it labeled for both. So, it should come up either way. Alright...peace to all!! :)

A Littel Tidbit by Ashley

Ok, so this isn't a recipe, but something tells me you will all want to know.  I have been meaning to tell my Mom, Lindsey, and Kimberly but keep forgetting. If someone told me I could only have two things in my make-up bag, it would probably be eyeliner and mascara.  I found a new mascara that I love.  This is coming from someone who's favorite was $27 dollar a tube Lancome mascara.  It is lashblast from Cover Girl.  O magazine rated it #1 best mascara of this year! I love it!! Just thought I would share!
