Greens and Beans by Ashley

This is a recipe I tried from Parenting Magazine. Jeremy, Blake, Tyler, and I loved it. Gray didn't love it and Sam absolutely not!!!

Ingredients:
1 pkg corn muffin mix (i used jiffy)
1 tbs olive oil
1 red bell pepper, chopped
3 cloves garlic, minced
2 15-oz cans Great Northern beans, rinsed and drained
1 pkg (10 oz.) frozen spinach, thawed and drained
1/2 c. chicken broth
1/2 c. water
2 Tbs. finely shredded Parmesan cheese
Salt and Pepper to taste

Directions:
1. Prepare corn muffin mix according to directions.
2. In the meantime, heat the oil on medium-high heat in a large skillet. Add red pepper and garlic; cook for about 4 minutes, stirring occasionally.
3. Mix in the canned beans. Add spinach, chicken broth, and the water; bring to a boil. Cook, uncovered, for 3 to 4 minutes or until most of the liquid has evaporated.
4. Put in bowls and top each with cheese and serve with cornbread.

****Jeremy really liked it but he didn't think it was filling enough, so you might want to make it as a side or maybe you could add grilled chicken.

Lite Frito Bandito by Ashley

I love making Chili this time of year and I don't know about you, but I always have so much leftover. This is a great way to change it up. My boys loved it. Obviously this is the healthier version from the hungry girl blog, which is what I ate, but for the boys I used real cheese. Either way it is good. Ingredients: 1/3 cup low-fat turkey or veggie chili ( I used my normal chili recipe which has extra lean beef in it.) 1 La Tortilla Factory Smart & Delicious Low Carb High Fiber Large Tortilla (or alternative below) 2 tbsp. shredded fat-free cheddar cheese 1/2 package Fritos Original Corn Chips 100 Calorie Pack (or other alternative below!) Optional: 2 tbsp. diced onion Directions: Place chili in a microwave-safe bowl, cover, and heat for 45 - 60 seconds, until hot. Set aside. Lay tortilla flat on a microwave-safe plate, and warm in the microwave for about 10 seconds. Spoon chili down the center of the tortilla. Cover the chili with cheese, and then top with Fritos. We had my whole family over to eat it(17 of us) and it seemed like the perfect amount of food. We served it with sausage cheese dip(look under appetizer label for this recipe). It was really good. Hope you like it! *I doubled the meat since I was making it for so many people* Ingredients 2 ripe tomatoes, diced 1/2 pound sharp Cheddar, diced 1 large onion, diced 1 head iceberg lettuce, washed, drained and shredded 1 pound lean ground beef, browned, crumbled and drained 1 cup salad dressing (recommended: Catalina) 1 (7-ounce) bag taco flavored chips, crushed 1 cup salsa Tortilla chips, to serve Directions Combine the tomatoes, cheese, onion, lettuce, and ground beef in a large bowl. Add the salad dressing and mix well. Just before serving, add the taco chips, tossing to combine with othe...
