Lemon Garlic Chicken

I made this last night.  It was delicious.  These ingredients I have most of the time at my house.  So, I was happy to stumble upon the recipe.  I served it with whole pasta and a salad.  If you haven't noticed, this is one of my favorite cooking blogs.  I've made nothing on here that I didn't rave about - simply wonderful - and most of the time super easy :)! Lemon-Garlic Herb Rubbed Chicken
Recipe by Our Best Bites

1 1/2 tablespoons finely minced or pressed garlic
1 large or 2 small lemons, zested and juiced
1/3-1/2 cup minced fresh herbs, preferably a combo of basil, rosemary, and oregano
1 teaspoon kosher salt
1/4 teaspoon black pepper
4-6 tablespoons (or more) extra virgin olive oil
1 1/2-2 pounds boneless, skinless chicken breasts*

*also great on fish and grilled vegetables

Combine garlic, lemon zest, lemon juice, herbs, salt and pepper.  Add olive oil until mixture comes together like a thick sauce.  If you have a mini food processor, you can blend the mixture until it becomes the consistency of a chunky pesto.  Rub mixture over chicken and/or vegetables and let sit for 20-30 minutes.  When ready to cook, preheat outdoor grill or indoor grill pan.  Cook a few minutes on each side, turning only once, until done (Internal temp should be about 165 degrees).

This recipe is so common I am not even sure if I should post it. However, if you do not have a recipe for this or have never had it you have GOT to try it. Such a Southern recipe. Grew up having it and everyone in college made it. Ha! 3 sleeves Ritz Crackers 4 or 5 boneless chicken breast 1 can cream of mushroom soup 1 can cream of chicken soup 8 oz sour cream 1 stick butter Melt 1/2 stick butter in 9x13 dish. Crush 1 1/2 sleeves of crackers and pour into butter. Stir and spread over bottom of dish. Shred COOKED chicken(boil it to cook it) and layer over crackers. Mix sour cream and both soups together and pour over chicken. Melt 1/2 stick of butter in a mixing bowl. Crush remaining crackers and add to butter. Stir until mixed well then add to top of casserole. Bake at 350 for 45 minutes or until golden brown.

Sweet Mama Rose's Oatmeal Apple Raisin Muffins By: Lindsey

My husband's grandmother, Mama Rose, is so sweet!! Derek says I don't make any of her stuff....and I will tell you why. It is all made from SCRATCH!! Lasagna, brunswick stew, muffins, cakes, etc. Whew!! It is good food, don't get me wrong. But, my goodness...who has time for recipes all from scratch?? So, I am going to try my hardest to start making some of them. This morning I made her Oatmeal Apple Raisin Muffins. Derek loves them and has mentioned to me before about making them. Keep in mind that Mama Rose is diabetic. Which means, that lots of things she makes is healthier for us. Ha! These muffins are a tasty, healthy treat for you and your kiddos. I love muffins! So, it is fun eating them when I know they have ONLY 1/3 cup sugar and apples and raisins in them. Parker, my son, also loved them. I have never made sugar cookies from scratch before. I have eaten a ton, but never made any. I got this recipe from Taste and See blog. My favorite part is that they are simple to make and they make a ton. I made some for a party we are going to and I had plenty to share with the boys. Recipe for the best "melt-in-your-mouth" sugar cookies in the world: Ingredients : 2 sticks butter, softened 2 cups sugar 2 eggs 3 1/2 cups all-purpose flour 3 teaspoons baking powder 1 teaspoon salt 1 teaspoon vanilla extract Directions : With an electric mixer, cream sugar and butter until fluffy. Add eggs one at a time and beat well. Mix dry ingredients together in a bowl and add to the butter mixture just until combined. Add vanilla. Chill in the refrigerator for about 30 minutes or so. Drop by teaspoonfuls onto a greased cookie sheet. Bake at 350-degrees for 6-8 minutes. Yield: about 6 dozen small cookies
