Cheeseburger Paradise Soup by Donna

Okay, fist of all, the name of this soup doesn't really do it justice. It is really good, but tastes nothing like a cheeseburger. Ingredients: 6 potatoes, chopped 1 small carrot-grated 1 small onion chopped 1/2 cup chopped green pepper 1/2 jar chopped jalapenos and 1/2 juice ( I would not put this much. I made it and it was so hot!!!. Be careful with the peppers.) 3 C. water 3 beef bouillon granules 2 heaping Tbs minced garlic 1/8 tsp pepper 2 lbs sausage 2 Tbs butter 5 C. milk 6 Tbs all-purpose flour 1 pkg 16 ounce Velveeta cubed crumbled bacon Directions: Combine first 9 ingredients and bring to a boil. Reduce heat cover and simmer for 15-20 minutes or until potatoes are tender. In a large skillet cook sausage, drain, add to soup. Stir in 4 cups milk, heat through. In small bowl combine flour and remaining milk until smooth, gradually stir into soup. Bring to boil, stir 2 minutes until thick. Reduce heat. Stir into cheese until melted. Mexican Corn Bread by Donna

This is for Kelly. Sorry it took so long. Ingredients: 1 C. Mozola Corn Oil 2 C. Self Rising Corn meal 1 can of cream style corn 5 Eggs 1 1/2 C. milk 3 Tbs. jalapenos, chopped 3 Tbs. jalapeno juice 2 C. grated onion 2 C. grated cheese 1 tsp. salt 1 tsp. sugar Directions: Combine all ingredients, pour mixture in a large skillet or pan. Cook in oven at 450 until brown.

Choc. Chip Banana Muffins(Makes 12 muffins) By: Lindsey

All I can say is DELICIOUS! Above is the picture of took of them fresh out of the oven. Sorry...I could have made it a prettier presentation. 1 1/2 Cup flour(all purpose) 1 Cup Sugar 1 Tsp. baking soda 1 Tsp. salt 1 Egg 1/2 Cup Miracle Whip 3 ripe bananas, mashed 1 Cup Choc. Chips(semi sweet morsels) -Mix flour, sugar, baking soda, and salt in big bowl. -In seperate bowl beat egg, stir in Miracle whip. -Add to flour mixture -Stir in mashed bananas -Spoon into muffin pan(makes 12 muffins) -Sprinkle choc. chips on top. -Bake at 375 for 20-25 min.

This is a recipe I received from my sweet friend Joanie. It is a hit and I have made it a million times since she passed it along. Ingredients: Romaine Sugared Almonds (put sliced almond and sugar in skillet, coat almonds until sugar melts, pour onto wax paper) 1 granny Smith apple Dressing: 1/3 cup sugar 1/3 cup apple cider vinegar 2/3 cup olive oil

Angel Hair Pasta by Ashley

This is my go to dish for when new people are coming over for dinner. I have passed this recipe along so many times. Ingredients: Olive Oil 1 Box of Angel Hair Pasta Pine Nuts Minced Garlic 3-4 Cloves 2 Shallots Fresh Basil Fresh Parsley 3 tomatoes 1 Container of Feta 1 Package of Parmesan Cheese Make Angel Hair Pasta according to the package. Pine Nuts: put on a cookie sheet and place under the broiler for roasting then set aside. These burn fast, so be careful. Chop: shallots and tomatoes, basil and parsley Put about 1/4 inch olive oil in a skillet and heat on medium heat. Add shallots and garlic. Saute for 1 minute. Add parsley and basil. Add tomatoes. (Doesn't need to be in very long). Drain Pasta. In a large bowl, add pasta, herb mixture, add pine nuts and cheeses and toss together.

Zatarain's Rice and Beans

Okay, before you say "what?" just hear me out. If you have been around our gang very much you know Lindsey, Kimberly, and I cook this at least once a month if not more. It isn't that original, but I had to share it. Red beans and rice will always remind me of sweet times with my family. Ingredients: 1 Family box Zatarain's Rice and Beans 1 Package of Smoked Sausage or Smoked Turkey Sausage Extra Rice 1 box of Jiffy Cornbread mix Franks Red Hot Sauce (optional) Directions: Cook Zatarain's according to package. Cook cornbread according to package. While rice and beans are cooking slice sausage and brown in a skillet until cooked on both sides. Also, cook your extra rice. When Zatarain's is finished add sausage. (If you want more rice just add it, if not it is still really good)

Carolina Vegetable Soup by Ashley

I absolutely love this soup. We eat it for days on end. It is a lot of chopping, but so easy and so good. Ingredients: 3 tbsp veg oil 2 cups chopped onions 3 garlic cloves, minced 1 cup peeled & chopped carrots 1 cup peeled & cubed sweet potatoes 1/2 cup chopped celery 1 1/2 cup chopped zucchini or gr beans 1 cup fresh, frozen, or canned butter beans 3/4 cup frozen corn kernels 1 1/2 cup chopped fresh tomatoes or1 can 1/2 tsp fresh thyme (1/4 tsp dried) 1/2 cup BBQ Sauce (mildly smokey) 4 cups water 1 tsp salt 1/2 tsp pepper Directions: In a large soup pot, warm the oil on med heat & saute the onions & garlic about 10 minutes. Add carrots, sweet potatoes, & celery & saute 3 minutes. Add next 6 ingredients. Stir & add water, salt, & pepper. Cover & bring to a boil. Reduce heat to low & simmer 20 minutes.
