Just made this the other night for the first time and they were yummy!!! Everyone loved them and I am actually taking them to a friend on Friday for a meal. I served them with rice, chips and salsa. This dish makes a lot! So, it is just two of you eating it or two adults and 1 child I would recommend freezing half of the recipe and cooking it later.
4 Chicken breast
4 oz. Cream cheese
2 TBSP. green chilis(or whole can)
2 TBSP. chopped onions
1 TBSP. butter-melted
2 C. shredded Monterey Jack with Peppers cheese(I used pepper jack cheese and shredded it myself)
2 C. cheddar cheese
1 C. salsa
1 C. whipping cream
8-10 lg. flour tortillas
Cook onions in butter until carmelized. Add green chilis and cream cheese. Mix in chicken.
Put 3 TBSP. of chicken mixture in each tortillas center. Then add cheeses. Then add salsa. Fold seam side down. Place in baking dish.
Pour whipping cream on top. Sprinkle with remaining cheese on top. Back on 350 for 30 min.
