Stewed Chicken and Sausage: by Kimberly

I made this the other night (from food network) and served with rice...so good.  My kids weren't so crazy about it, but Wade and I loved it.

Ingredients

  • 1 small chicken (about 2 1/2 pounds) cut into 8 pieces
  • Essence, recipe follows
  • 1/2 cup all-purpose flour
  • 1/4 cup vegetable oil
  • 1 pound smoked sausage, cut crosswise into 1/2-inch slices
  • 2 cups julienne onions
  • Salt
  • Cayenne
  • 4 bay leaves
  • 1 tablespoon chopped garlic
  • 6 cups canned chicken stock
  • 1/4 cup chopped green onions

Directions

Season the chicken pieces with Essence. In a mixing bowl, add the flour and season with Essence. Dredge the chicken in the seasoned flour, coating each side completely. Add the oil to the slow cooker, over medium heat. When the oil is hot, add the chicken. Turn to brown the chicken on all sides. Cook until evenly browned, 5 to 6 minutes. Add the sausage, stir and cook for 5 to 6 minutes. Add the onions. Season with salt and cayenne. Cook for 5 to 6 minutes. Add the bay leaves, garlic and chicken stock. Cover the slow cooker and cook for 3 hours, or until the chicken is tender. Stir in the green onions. Reseason if necessary.

Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):

  • 2 1/2 tablespoons paprika
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme

Combine all ingredients thoroughly.

Yield: 2/3 cup

Hey Friends!! This recipe is super easy and quite good. Beware that it is a little spicy. If you like wings or anything buffalo style then you will like this. Buffalo Chicken Chili Ingredients : 2 chicken breasts (cooked & shredded or raw & whole) I used 3 total. 1/2 bottle Frank's Buffalo Sauce 1 (15.5-oz) can beans (garbanzo, black, pinto, whatever!) Chocolate Sour Cream Bundt Cake

I have not posted in a REALLY long time. :( Sorry friends. Life has gotten a hold of me. I am 6 weeks and 1 day away from birthing my 4th and final baby. :) I am happy about this!! VERY! Needless to say an *almost* 6yo boy, 4yo boy, 2yo girl, and soon to be a sweet baby girl has kept me very busy. These are a pinterest recipe and oh so yummy and easy! Smores Bars Refrigerated chocolate chip cookie dough  About 12 flat marshmallows (Have you seen these?  They are perfect) About 3-4 hershey chocolate bars Graham crackers Spray the bottom of a casserole dish (size is up to you..vary the amounts of your ingredients accordingly) line the bottom of your dish with graham crackers  put your break apart chocolate chip cookies on top of the graham crackers and flatten them with your palm add the chocolate bars until they cover the cookie dough Bake at 350* for 15 minutes, then add your flat marshmallows to the top to brown and melt for about 5 minutes. Cut into bars when they've cooled and serve with a tall glass of ice-cold milk.
